Indulge in an Avocado-Egg Salade

Avocado: It’s a fruit I cannot get enough of. I used to not be so into it, until I found the different ways to combine it. I love it plain with some vinegar, blended in my green smoothies or mushed in an avocado-egg salade. The recipe? Super simple! It takes literally two minutes, more or less two main ingredients and some bread with it, if you like. Not only is it super yummy, but also super healthy to have. I could eat an avocado a day, literally. So here is the quickest and simplest recipe, when it comes to my avocado-egg salade.

Ingredients:

– 2 hard-boiled eggs
– 1 ripe avocado
– salt & pepper
– chilli, if you like
– ½ lemon

All you have to do is cook the two eggs until hard-boiled, mush the already ripe avocado and add the two eggs to it. I normally cut the egg into smaller pieces, which makes the mixing in the end easier and makes less of a mess. Now, depending on your taste, add as much salt, pepper, lemon and chilli to it, as you like. Voila – there goes your avocado-salade. I love having it on some pumpernickel (the super dark bread) or with some bread in general.
